From Humble Pie to Peach Pie

It's peach season here in Georgia! The peach growers say that this year's crop is the best it has been in a long time. Here's one of my favorite recipes using fresh peaches.

Fresh Peach Pie

1 deep dish pie shell, baked & cooled
1 cup sugar (divided)
1 1/2 tablespoons cornstarch
1 cup water
Small box of peach flavored gelatin dessert
8 oz cream cheese, softened
About 6 - 8 large peaches, sliced

Combine 1/2 cup sugar, cornstarch, and water into a saucepan and cook until thick and clear. Add gelatin mix. Allow to cool to room temperature.

Blend 1/2 cup sugar and cream cheese until smooth and fluffy. Spread into pie shell. Top with fresh sliced peaches. Pour cooled gelatine mixture over the peaches. Top with whipped cream and refrigerate until set.
